Ingredients: 300g boiled bamboo shoots (drained and shredded), 2 tbsp chili oil, 1 tbsp doubanjiang (chili bean paste), 1 tsp toasted ground Sichuan peppercorns, 2 cloves garlic (sliced), 1 thumb ginger (julienned), 1 small red bell pepper (sliced), 1 green onion (cut into 2-inch pieces), 1 tsp light soy sauce, ½ tsp sugar, 1 tbsp vegetable oil.

Instructions: Heat oil in a wok and sauté the Sichuan peppercorns until fragrant. Add garlic and ginger, stir-fry 30 seconds. Add doubanjiang and chili oil, frying until aromatic. Ingredients: 300g boiled bamboo shoots (finely chopped), 1 small onion (diced), 2 cloves garlic (minced), 2–3 finger chilies (sliced), 2 tbsp calamansi juice, 1 tbsp soy sauce, 1 tbsp mayonnaise, cooking oil, salt and pepper to taste.

Instructions: Sauté garlic and onion in oil until fragrant. Add chopped bamboo shoots and stir-fry until lightly browned at the edges. Season with soy sauce, salt, and pepper. Remove from heat, stir through calamansi juice and mayonnaise, and top with sliced chili. Serve sizzling with rice, as pulutan, or on a sizzling plate.

Ingredients: 2 cups day-old cooked rice, 1 cup boiled bamboo shoots (shredded), 2 eggs (beaten), 3 cloves garlic (minced), 2 tbsp soy sauce, 2 tbsp cooking oil, chopped green onion, salt and pepper to taste.

Instructions: Scramble the eggs in oil, set aside. In the same pan, sauté garlic, then add bamboo shoots and stir-fry 2 minutes. Add rice, breaking up clumps, and stir-fry until heated through. Return the egg to the pan, season with soy sauce, salt, and pepper, and toss well. Garnish with green onion and serve.
