How to Store Labong (Bamboo Shoots) & Shelf Life Guide
How long bamboo shoots last fresh, boiled, canned, and frozen — plus the storage habits that keep them safe and tasty.
Fresh Labong (Uncooked) Shelf Life
Raw, unpeeled bamboo shoots last only about 5–7 days in the refrigerator. Keep them wrapped or submerged in water in a sealed container, and change the water daily. Discard if the shoots turn brown, feel slimy, or develop an off smell.
Preparing Fresh Shoots for Longer Storage
If you’ve peeled and sliced fresh labong but aren’t ready to cook it, storing the pieces submerged in water in a sealed jar in the fridge can extend usable life to roughly a week — still best used as soon as practical.
Refrigerating Boiled Labong
Once boiled, store bamboo shoots covered in the refrigerator — ideally submerged in fresh water or broth — and use within 3–4 days. Boiling followed by refrigeration is what keeps bacterial growth in check.
Canned or Bottled Labong (Unopened)
Unopened jars are shelf-stable for 1–2 years stored in a cool, dry pantry. Always check the “Best Before” date on the label, though an unopened, undamaged jar can often remain good a little past that date.
Once Opened
After opening a jar or can, transfer any leftover labong into a sealed container with enough fresh water to keep it covered, and refrigerate. Use within 3–4 days. Never leave opened canned or jarred labong sitting at room temperature.
Freezing Bamboo Shoots
Freezing isn’t ideal — the shoots’ signature crisp texture turns mushy after thawing. If you need to freeze, blanch the shoots first, then freeze tightly in an airtight bag for up to 2–3 months. Thawed shoots work best folded into soups or stews, where texture matters less.
Signs of Spoilage
- A sour or off smell
- Slimy texture
- Visible mold
- A bulging, leaking, or damaged can or jar
Discard the product immediately if you notice any of these signs — don’t taste-test to check.
